My cake is in the oven at the moment...minutes away from coming out. I decided to half the recipe and baked it in a 6 inch round cake pan. I did deviate from the recipe just slightly...I added in 1/2 teaspoon of vanilla (would use at least 1 teaspoon for the full recipe) and I used 2 smallish eggs rather than 1 1/2 eggs (since I halved the recipe). The cake rose just above the top of the pan (higher than I was expecting). I think I ended up baking it about 45-50 minutes. It smells delicious!
Amazing cake. No substitutions or additions or tweaks in my recipe, I followed it word by word. Perfect for any night of the week, moist, with a slight cinnamon touch, and with a smooth chocolate frosting.
