I made this yesterday and it gets the big thumbs up! I halved the recipe and made a mini pie. It works out nicely for 4 moderately proportioned servings. I had trouble finding chocolate wafers at my local grocery store, so I bought Oreos and removed the filling. It worked out perfectly. This is easy to make and just requires a bit of planning so you can allow for the various layers to set up up. I made all but the final fudge topping the night before we served it. Nice pick Jess! Looking forward to seeing everyone's pies.
I too couldn't find wafers and so bought oreos too! For some reason I can never find chocolate wafers! I plan to make this for a meeting on Friday. I am also having trouble finding espresso powder. I'd like to make the ice cream myself. The two grocery stores I go to do not have it. Any suggestions? I guess it is too late to order it over the Internet :-(
Lorraine, I made my ice cream by soaking 1 1/2 c of coffee beans (whole) in 4 cups of the milk base over very low heat for about an hour. It seemed to work out pretty well. I couldn't find espresso powder either.

Thanks Gloria & Jess! What a great idea Jess. I am not much of a coffee person unless it is a really sugary chocolate drink! :-) I was actually able to find the espresso powder that they mentioned in the book at a health food store near me today. I will be making it tomorrow night! I can't wait!
I wanted to make this badly but no one, in my house will eat it. It is not something, I can take to my class and I am dieting and would eat it, all up.
My husband will love the speculaas, I am sure. I am glad that is one that I know should be a success.

ReplyDeleteLorraine, I've never purchased espresso powder for so I'm not sure. I would guess a specialty foods store or a place like Whole Foods?

Oh, and a threw a half a vanilla bean with the coffee beans for a hint of vanilla flavor.
